At Truly Pizza in Dana Point, California, excellence is not accidental. Founded by Las Vegas hospitality veteran Donna Baldwin and World Pizza Champion John Arena, Truly Pizza represents decades of culinary expertise, operational discipline, and a shared passion for artisan craftsmanship.
Working alongside World Pizza Champion teammates Chris Decker and Michael Vakneen, the Truly Pizza team has built a reputation for delivering high-quality pizza at scale. When the time came to increase production capacity, the team turned to PizzaMaster.
The First Dual 1100 Series Installation
In a milestone installation, Truly Pizza replaced its existing ovens with two PizzaMaster 1100 Series electric 3-deck ovens installed side by side:
- PM 1123 ED
- PM 1133 ED
This marks the first known side-by-side 3-deck installation of the 112X and 113X, creating a powerful high-volume production platform within the Dana Point kitchen footprint.
The goal was clear:

Stress Test Results: 600+ Pizzas in One Day
Following installation, the team conducted a full operational stress test.
Performance highlights:
- Over 600 pizzas produced in a single day
- Seating capacity: 100 guests plus carryout
- Highly optimized production line
- Noticeably improved pie color
According to dealer partner Frank Casares of Surfas Culinary District: “I have not seen a kitchen staffed this well anywhere.”
The Truly Pizza workflow demonstrated textbook efficiency:
- dough stretching
- saucing and topping
- oven operators
- finishing and cutting
The new 1100 Series platform supported this high-performance system seamlessly.
Customer Feedback
Michael Vakneen shared strong early feedback following the installation: “We were getting better color on the pies and are thrilled with the ovens.”
